Poetry of origin. Around the magic of the lime-rich slopes of the Bisamberg, the great Burgundy varieties have found a truly wonderful home. And yet the „Kastanienwald“ opens a completely new, almost intimate chapter in the history of our winery. It began with a small vineyard we took over: a tiny red island in the middle of a sea of white vines. This patch of land was so small that we made a radical decision: we let go of everything we know about modern oenology and take a completely new, untrodden path.

This Pinot Noir was made in absolute originality. No machines, no destemming, no pressure from a press. Only nature and people. A few careful steps, real footsteps directly in the crates of grapes, to obtain just a few litres of free-run juice. Nothing more.

What happens next is highly subtle. Fermentation starts with endless, almost meditative slowness. Over weeks the berries opened all by themselves, cool, without any notable rise in temperature, as if nature wanted to savour every fraction of this precious time. The result is of fascinating, filigree beauty. A wine that enchants with a compellingly cool, expressive interpretation of fruit. At first, nuances of fresh peppermint and eucalyptus rise up, delicately and elegantly underlaid by light red forest berries.

After gently draining off the stems, this free spirit was allowed to rest for up to 36 months in wooden barrels that do without any noticeable toasting, so as never to mask the pure, naked identity of the fruit. The Kastanienwald Pinot Noir is a wine absolutely out of the box. It is cool, delicate, deeply moving in its gentleness and yet charged with vibrant, irrepressible energy.

A true diva: this is how this delicate, thin-skinned and extremely vulnerable grape variety presents itself.
Taste: cool, fresh, spicy

Anyone looking for power and muscle here is in the wrong place. On the contrary, Pinot Noir shines with coolness, freshness and a silky, carefree drinkability.

Since antiquity, the sweet chestnut has made its way from the Mediterranean to the southern flank of the Alps. The chestnut forest (Kastanienwald) is a symbol of evolution and gives this wine its name.

This mini vineyard is only a few rows of vines in size. So small that the decision matured to do without any technology. Not destemmed, not pressed, fermented slowly and cool: winemaking off the textbook.

The wine shows refreshing notes of mint and eucalyptus as well as fine aromas of ripe wild strawberries. It was aged for 36 months in barrels without noticeable toasting, followed by further bottle maturation. Unfiltered.

Contains sulphites.

Delicate garnet red. Cool scent of peppermint and eucalyptus, underlaid by redcurrant and morello cherry. Noticeable spice on the palate, raspberries and eucalyptus. Accompanied by chalky minerality, our Pinot Noir leads into a long, elegant finish.

hand-picked, organically produced, vegan
